Palm Grill launches new dishes to celebrate the delicious flavors of Mindanao

When it comes to food from Southern Philippines, I do not have a lot of experience. A sad reality I plan to remedy with the help of friends.


Recently, I had the privilege of trying two new dishes from Palm Grill, one of the purveyors of Mindanaoan cuisine in Metro Manila.



Beef Piassak, a Tausug specialty made of sirloin beef and beef liver cooked with locally made pamapa and various spices. It has a deep toasted coconut flavor and enough heat to keep the rice coming.



Its vegetarian counterpart is Kaliya Puso, made with banana hearts instead of beef. It has the same rich flavor as the Piassak, but with a little more kick. I love how they stewed it in coconut cream, letting out its natural oils a.k.a. nagmamantika.



Both dishes go beautifully with Bubuk — steamed rice with dried fish, chili, coconut meat, and garlic. Turmeric gives the rice its golden color, making it more appetizing and aromatic at the same time. The rice is topped with toasted coconut for added flavor and texture. Despite everything going on with the Bubuk, it didn’t overpower the Piassak or Kaliya Puso.
