Toaster-Friendly Tuna Melt

Here’s my own take on a Western classic that’s creamy, cheesy, and so easy to make.
Serves 4 persons
Cooking Time: 20-30 minutes
INGREDIENTS
For the tuna topping:
1 can tuna chunks (in oil or brine)
1/2 medium onion, finely chopped
3 tbsp cream
1 tsp green onions, finely chopped
1/4 tsp ground black pepper
1/3 tsp brown sugar
2 tbsp onion dip (optional)
Panko breadcrumbs (as needed)
1/2 cup parmesan (or your favorite cheese), grated
For the bread:
1 baguette, sliced into quarters
2-3 cloves garlic
1 tbsp unsalted butter
PROCEDURE
In a bowl, combine all the ingredients for the tuna topping except the Parmesan. If the mixture is a little too wet, add some panko and cheese to absorb the extra moisture. Taste for seasoning and adjust to your liking. Set aside.
Rub the garlic cloves on the sliced baguette then butter generously.
Divide your tuna mixture into four portions. Top each baguette slice with the tuna then sprinkle with parmesan cheese to your liking.
Pop in the toaster oven for 4-5 minutes, making sure to check the surface for golden brown spots. Once toasted, serve warm and top with some chopped green onions.
NOTE
Got leftover tuna spread? Keep it in an airtight container in the fridge for your next tuna melt emergency!
