As someone who loves food but also culinarily challenged, I am a huge fan of easy recipes. Cooking can't get any simpler than this lockdown-induced recipe, which also got the nod from CCA Manila in 2020. But don't worry, no fancy ingredients or knife skills required here. Most, if not all, of the ingredients are probably already in your fridge or cupboard.

As for the final taste, just follow your tastebuds! That's the best thing about cooking at home, you can always tweak recipes to your liking.

Serves 3-4 persons

Cooking Time: 30 to 45 minutes

INGREDIENTS

4 pieces boneless chicken, cubed (I used chicken thighs)

2 tbsp garlic, finely chopped

1/4 cup honey

1/3 cup soy sauce

1 tsp brown sugar

1/4 cup meat/bone broth*

salt and pepper to taste

1-2 tbsp cooking oil (for frying)

sesame seeds (for garnish, optional)

chopped green onions (for garnish, optional)

togarashi (optional)

PROCEDURE

Season the chicken with salt and pepper. In a pan, heat some oil and sauté the chicken over medium flame until slightly brown. Add the chopped garlic and sauté for another two minutes over low to medium flame. Don't let your garlic burn!

In a small bowl, combine soy sauce, honey, brown sugar, and broth. Mix until the sugar dissolves and the honey is well incorporated. Pour the mixture over sautéed chicken and mix. Let it simmer over low to medium flame until the sauce is reduced to half or until the sauce becomes sticky, coating the chicken well. It won't take too long so keep your eye on it.

Serve on top of steamed rice. Best served with chopped green onions, sesame seeds, and even a sprinkle of togarashi.

NOTES

No bone broth? You can also use a bouillon cube into 1/4 cup of water.

This also goes really well with egg noodles! Just double the sauce recipe to also coat your noods.
